Choy sum is grown in countless Malaysian home gardens, and for good reason: it is fast, forgiving and usually harvested before pests have time to settle in.

  1. Sow 2–3 seeds per cell in a seedling tray, about 0.5 cm deep, or sow directly in a trough.
  2. Keep the mix moist, and move the tray into bright light as soon as seeds sprout so seedlings don't stretch.
  3. Transplant or thin to about 15 cm apart when they have 3–4 true leaves.
  4. Harvest when the first flower buds appear on the main stem — that is when the stems are sweetest.

Tip: fine netting over the pot keeps flea beetles and caterpillars off the leaves without any spraying.
