Bayam is one of the toughest leafy greens for lowland Malaysia. It handles heat far better than most imported greens and recovers quickly after heavy rain.

  1. Mix the tiny seeds with a pinch of dry sand so they spread evenly.
  2. Scatter over moist potting mix and cover with a very thin layer of soil.
  3. Water gently with a fine rose or sprayer so the seeds are not washed away.
  4. Thin seedlings to about 10 cm apart once they have a few leaves — the thinnings are edible.
  5. Harvest whole young plants, or pinch the tops for repeat picking.

Tip: pinch off flower heads as soon as they appear to keep the leaves tender.
